For those times you need a quick and easy dinner for your family, try this Taco Salad recipe. Simple ingredients that you may have on hand already.  Feeds 4.

  • 1 pound ground beef or ground turkey
  • 1 cup chopped onion
  • 1 teaspoon taco seasoning (optional)
  • 1/2 teaspoon garlic salt
  • 1 cup cheddar cheese
  • 1 cup shredded iceberg lettuce
  • 1 large tomato diced
  • 1 jar taco sauce
  • 1 bag flavored corn chips
  • 1 can sliced black olives (optional)
  • Sliced fresh alvocado (optional)

In large frying pan saute 1/2 cup onions until translucent.  Add ground meat, seasoning and garlic.  Cook until the meat is fully browned.  In a large bowl, crumble corn chips, add cooked meat mixture and cheese and mix until combined.  Top with lettuce and tomatoes.  Serve with taco sauce.  (Check your ingredients and this too can be made as a gluten-free meal.)
