Homemade Chicken Soup
Your family will love this delicious and warm homemade chicken soup recipe. My grown-up daughter asked if we could have it for Christmas dinner! So we did! (This recipe can be made using gluten-free and lactose-free ingredients.)
- 2 cups cooked, cubed chicken (Rotisser chicken, available in most grocery stores, make excellent chicken soup.)
- 4 teaspoons Orrington Farms Broth Base & Seasoning (mixed into 2 cups water)
- 1 cup onion chopped
- 1 cup chopped celery (include leaves)
- 1 tablespoon pepper
- 2-4 cups water
- Orrington Farms Broth Base & Seasoning, to taste
- Salt (to taste)
- Soup alternative*
*Soup alternative (gluten/lactose-free)
- 5 tablespoons margarine
- 5 tablespoons Bob’s Red Mills Gluten Free Potato Starch
- 4 cups Lactaid Lactose-Free Milk
In a separate frying pan. Melt margarine over medium heat. Blend in the potato starch and cook until bubbly. Slowly add milk and stir with a whisk until it gets very thick. Remove from heat and slowly add it to the soup. Blend it in until the lumps disappear. (1 can of condensed cream of chicken or cream of celery soup can be substituted if gluten-free and or lactose-free ingredients are not an issue.)
Directions
Place chicken, water with Broth Base, onions, celery, and pepper in a heavy soup pot and bring to boil. Add water as necessary to cover chicken and vegetables. Add additional broth base and salt to taste. Continue to boil until the celery is soft but not mushy. Blend in soup alternative* and gently stir until the lumps disappear. Lower the heat to simmer and gently stir until thoroughly heated. Serves 4.
Serving Suggestions
Delicious and warm chicken soup, serve it by itself or over fresh mashed potatoes for a hearty and filling meal. Don’t be afraid to add rice or gluten-free noodles for a thicker soup. Round the meal off with fresh veggies or a pan of freshly baked, warm gluten-free biscuits.
Tips
This recipe can be made totally gluten-free, lactose-free or gluten and lactose-free. Tastes great no matter which way you make it. We have several food allergies in our family including gluten, lactose, tree nuts and peanuts. Always know who you are cooking for and what their allergies are and closely check the ingredients labels for potential allergens. Double the recipe. Makes for excellent leftovers!
